Jonah Crab, the Other White Meat?

During the winter months Jonah is King of the Sea, at half the cost of blue crab meat!

  

  • Jonah crabs are often compared with Rock crabs, however with an average carapace width of 7 inches Jonahs are larger and have bigger claws than Rock Crabs
  • Cancer borealis is the latin name for Jonah but much of the marketplace call this species Atlantic Dungeness, a little more familiar name
  • Caught in pots, up and down the Atlantic east coast by day boat fisherman.
  • Small percentage is brought back live for the Asian markets as in the above picture, most have a claw broken off and thrown back to grow another back.

 

  • Jonah meat is a great deal during times that blue crab prices are high, mostly during the winter time
  • Very sweet and flaky white meat is perfect in any recipe that calls for crabmeat
  • If you feel adventurous, give us a few days notice and we can bring in the live and you can cook and serve them like a blue crab for picking 
  • All Leg Meat the Jumbo Lump of Jonah is priced at $14.95 
  • The Combo Leg Body meat is priced at $9.95

 

  • Their next favorite usage is whole cooked claws
  • Perfect in a bar setting for finger food and appetizers

Trout and Char/Jonah Crab/Odds and Ends

         

The trout family consists of several poplular species that a lot of people did not realize were related to the trout.  Salmon, Ocean Trout and Arctic Char are all in the trout family

  • At ProFish, we carry two varieties of Rainbow Trout, boned head on, and headless "clear cut".  Both are readily available and all are reasonalbly priced.  The boned, head on are packed in 10# units and are 10 ounces per piece, there are 16 pieces in the 10# tray.  The boned trout has the back bone removed, however the pinbones are still in.  The Clear Cut are head and tail off, and totally bonelss.  They are also packed in 10# units and range in size from 8-10 ounces.  The clear cuts are a 100% yield product.  On special order, we also have 5 to 7 ounce fillets.  All rainbow trout are fresh water fish.
  • Arctic Char is also a member of the trout family and comes to us farm raised in Iceland.  During the summer months we have a vailable a limited amount of wild char from the Nunuvut region of Canada.  Arctic char have a salmon like look to them, but have a much finer flake and a taste closer to trout.  Fresh char can have a color from deep red to pale pink, but the taste is the same.  Char have a higher fat content than the salmon and are generally moister.  Char can be either fresh or slat water raised.
  • Ocean Trout, which comes to us from Cleanfish, is raised in open ocean pens in the Faroe Islands.  Ocean trout has a rich, satifying flavor and a smooth texture.  With a thick belly wall and high fat content, this fish is great for grilling and sashimi.  Faroe Island Ocean Trout is a special order item for Profish, please call your sales rep fro pricing and to order this fine fish.

        

Jonah crab are a great value now! During the summer months we get them from local fisherman out of Ocean City Maryland. The winter months are supplied out of Maine and Rhode Island. With Domestic blue crab prices reaching over $20 a pound, all leg picked jonah meat is a steal at under $15 and leg body combo meat is under $10. Keep in mind we bring this in to order so if you would like to try some please give us a 2 day lead. Another product we can supply is the full shell on claw and one's that are scored for ease of cracking(pictured with the wooden crab hammer). Great Bar food and they are under$6.

  • Jonah is the Atlantic cousin to the popular Pacific dungeness crab
  • Jonah are harvested all year long from Florida to Maine
  • It is flaky and sweet, darker and heavier in texture than dungeness
  • Listed as a "Good Alternative" on Monterey Bay Aquariums Seafood Watch listing 

   

At ProFish, we carry a wide variety of fresh, frozen and smoked fish and seafood.  A lot of what we carry is mainstream and is found on a lot of menus, but we also bring in specialty items and hard to find fish and seafood from around the world.  These items, though not always in high demand, bring a certain uniqueness to any menu looking to set itself apart from the norm.  Below are a few of those items.

  • Hiramasa and Himachi are two closely related fish from the South Pacific.  Hiramasa is farm raised in Australia and comes to us from Cleanfish fresh in whole fish form.  The meat is white, dense and full of flavor.  Hamachi is farm raised in Japan and comes to us in frozen fillets, individually wrapped.  The himachi is seen on many sushi and sashimi menus often called yellowtail. 
  • Sturgeon also comes to us from Cleanfish and we get both farm raised and wild fish.  The meat is an off white color and cooks up very white.  It has a mild flavor, firm texture and is great for most cooking methods.
  • The Pacific Halibut season opens on March 15, and everyone is excited for the first catch of the year!  In the meantime, we have had a decent supply of East Coast halibut in this week as well as farm raised halibut from Norway. 
  • With the onset of spring, we are starting to see the migration North of Shad.  Shad Roe is a local favorite and is available now.  The fish are currently in Georgia and the Carolina's and should be hitting Virginia soon.  Boned shad fillets are also available.  The roe are packed in tubs of 8 sets each and are sized either medium, large or jumbo.  Call for pricing as the price fluxtuates daily.
  • We have limited amounts or Hake, Barramundi, Suzuki Mulloway, Black Bass and an ever changing inventory of exotic oysters.  Call for today's selection.
