Well, the week after the what for us is one of our biggest weekends of the year. Valentine's Day has always been an excellent week for seafood and seafood lovers. Many restaurants will feature some heartthrob fishes for their lovestruck patrons, with red snapper, opah, and tuna being big favorites for the red color! We have all of these great fish available again this week, along with a few other great choices.
Corvina: This fish is making its first appearance on our website for the Wholesale to the Public. Golden Corvina comes to us from Central and South America's temperate waters, with our leading supplier being Ecuador. Corvina has a high-fat content making it suitable for many types of cooking methods, including grilling, baking, fried, or broiling. The mildly sweet, sweet flavor is perfect for any marinade and is an excellent choice for ceviche. Corvina is called white sea bass in other countries, though it is closer to a drum or croaker.
Cobia: Here is one of my favorite fish to eat. The Open Blue pens are based 8-10 miles offshore. Their farming operations are fully submerged at depths of up to 250 feet. Open Blue is a pioneer and the world's leader in raising fish in the open ocean. Situated in a protected no-take zone of 2,500 acres of water, this pristine natural environment is home only to Open Blue and indigenous marine species. With the rich, buttery flavor and ease of cooking, and the high nutritional values (omega3 fatty acids, protein), it is easy to see why cobia is one of my favorite fish to eat. We have cobia on the fresh fish category for $21.95/lb for the skin off fillets.
