Well, it was this week last year that we put together the first "Meet the Trucks" to fill a void created by the outset of the pandemic. Many grocery stores closed their seafood counters to use the labor to stock shelves as toilet paper, pasta, and other items were flying off the shelves. Our General Manager and VP, Tim Lydon, got a call from a relative who lives close by saying she and her neighbors could not find any fresh seafood at their nearby grocery stores and asked if he could bring them some fresh fish home for them. Tim called me, and I said I could put some feelers out to my neighborhood, and from there, off it took.
Our first week of deliveries was crazy. The website was not yet set up. We put together a makeshift list of what we thought were popular items and emailed them to our contacts. From there, you, our customers, spread the word that ProFish was coming and reaching out to Tim or me to get in on the action. We started with just a handful of locations, Lansdowne, Holy Redeemer, Clarksville, and North Bethesda Middle School. We were taking orders by email, texts, and phone calls to start. It was crazy those first few weeks. Orders would pour in those early few Thursday afternoons for the Friday truck. I remember the first two weeks I was up until 1:00 or 2:00 in the morning emailing everyone their totals so that you could bring a check already made out, pick up your box of fish and be on your way home in no time. The third week was Easter, and it was crazy. At Lansdowne, we had a wait of almost 2 hours as we had over 120 orders. We got some help from a great neighbor, and everyone was so patient, and at the end of the day, all got their fish, and we made some changes. The following week was our first with the online system, and even though we had close to the same amount of orders, the line was only 5 minutes. Progress!
Now we are at 18 Meet the Truck locations throughout the region offer door-to-door service in select zip codes and are in 5 Farmers Markets, and all thanks to our continued support from you, our customers. Many of you are still with us, and I have heard so many great stories about how many of you would not eat fish at home as you didn't know how to cook it, and how many people tried a fish they had never heard of and thought to themselves how good it was. We introduced many species that most people would never try. All it took was a little information on the fish, and BAM, you were hooked (pun intended). We offered up our pasta line and brought in steaks, burgers, breakfast meats, and so much more.

Stone Crab Claws: The Florida Stone Crab Season is in full swing though we are seeing fewer and fewer jumbos. We are now offering only large claws, 3-5 claws per lb. As the season progresses, we are seeing smaller catches being made. May 10th is the last official day of the season, so if this is your thing, you may want to grab a few lbs now. $35 per lb and well worth it. And while you are at it, grab a jar of the Remoulade sauce to go with your stones, $6.75/jar.
Scallops: We are now offering two sizes of fresh "dry" sea scallops. Dry means no added chemicals to add weight. U-10 sea scallops are the largest we offer. You get about 9 or 10 scallops in a 1# tub for just $24.95. At 1.5 ounces each, 3 or 4 scallops make for a great meal. Our other size scallop is a 10/15 count. We have these for $17.95/lb. Our scallops are harvested off the coast of Massachusetts in the Elephant Trunk or the Nantucket Lightship areas.
Halibut: Our halibut comes to us from the Atlantic Ocean, Nova Scotia, New Brunswick, and off the coast of Maine. The thick fillets are translucent when raw and cook up pure white. The flavor is mild with a large, firm flake and takes to any marinade or rub. Halibut grills up nicely and is excellent for baking, sauteing, and ceviche. We have skin on fillets for $25.95.
